Mediterranean Ground Pork Tacos
Ingredients:
1 lb. ground pork
1 tsp. garlic powder
1 tsp. oregano
1/2 tsp. salt
1/2 tsp. black pepper
flat breads (to be used as taco shells)
Taziki Sauce:
1 c. plain Greek yogurt
1/2 large cucumber peeled, deseeded, and diced
2-3 Tbsp. red wine vinegar
juice of 1/2 a lemon
1/2 tsp. salt
1 Tbsp. minced garlic
2 Tbsp. dried dill
Tomato Topping:
2 large tomatoes, diced
1/2 large cucumber, diced
1 small red onion, diced
1/4 c. feta cheese
juice of 1/2 a lemon
1 tsp. minced garlic
2 - 3 Tbsp. Italian or Greek salad dressing
Instructions:
Add Taziki Sauce ingredients to a mixing bowl and stir until combined. Cover and refrigerate until ready to serve.
Season the ground pork with garlic powder, oregano, salt, and pepper. Cook the ground pork in a skillet over medium heat until completely browned.
Add Tomato Topping ingredients to a bowl and mix until combined.
For assembly, add ground pork to a flat bread, top with a Tomato Topping and Taziki Sauce. Fold flat bread like a taco, eat and enjoy!
Tips:
If time allows, make Taziki Sauce 30 min - 1 hr. prior to servicing for flavors to fully develop and the ingredients to marry together.
Pita bread or tortillas can be substituted for flat bread.
This recipe could be made using leftover pork chops for an easy cook once, eat twice meal solution.
